Executive Chef
Salary: $65,000–$100,000/year

Overview
The Executive Chef oversees all back-of-house operations and staff, reporting to the GM for daily downtown operations and the owner for broader culinary direction. Responsibilities include team leadership, inventory oversight, and cost/labor control. This role requires a strong understanding of restaurant operations and a focus on growing Ex Novo’s culinary presence in New Mexico. The Executive Chef will collaborate with the GM to meet COGS and labor goals, manage employee performance, and ensure facility standards are upheld—all while serving as a brand ambassador both in and outside the pub.
Key Responsibilities
- Collaborate closely with the GM and executive team to uphold daily standards and expectations across the pub. Oversee labor and food costs, communicating key insights to both FOH and BOH leadership. Maintain and improve culinary systems, ensuring the kitchen is properly staffed, trained, and operating safely. Conduct regular food safety audits, quality checks, and guest feedback evaluations.
- Manage ordering and inventory, working directly with vendors to maintain accurate pricing, prevent loss, and ensure the kitchen is fully stocked. Maintain vendor communication, log invoices, and update cost sheets regularly.
- Support administrative needs by keeping employee documentation, permits, and reviews current. Lead the BOH team through consistent scheduling, performance reviews, and coaching, with a focus on retention and team development.
- Foster a culture of mentorship by providing educational opportunities and ensuring compliance with food safety and sanitation standards. Address guest needs, including large party bookings and private events. Collaborate with the GM on quarterly planning and attend monthly financial meetings to align kitchen operations with company goals.
Physical Requirements
- Capable of lifting 60 lb loads, navigating stairs, and standing for 6‑8 hours in environments ranging 32–100 °F.

Assistant Kitchen Manager
Salary: $45,000-$55,000
Full-time • 8‑hour shift • 40+ hrs/week • weekends required
The Assistant Kitchen Manager (AKM) serves as a key leader in the kitchen, regularly stepping in as manager on duty and acting as a bridge between line staff and leadership. They uphold the standards set by the Executive Chef and General Manager, making real-time decisions on staffing, coaching, and kitchen flow. The AKM is expected to be hands-on—working the line, expo, prep, and backup as needed—while staying highly organized, communicative, and proactive.

Ensure kitchen cleanliness, organization, and food safety compliance

Attend kitchen leadership meetings and assist with scheduling and daily operations

Communicate effectively across departments, including FOH and management

Handle guest issues and act as a liaison to ensure smooth service
Expectations:

Arrive early and maintain strong communication via 7Shifts, Slack, and email

Execute all recipes with consistency and assist with specials and new menu items

Monitor kitchen performance and productivity; make labor cuts when appropriate

Contribute to ongoing development of kitchen systems, checklists, and protocols

Line Cook
Employment Type: Full-time
Pay: $15–$18/hour
Shift: 8-hour shifts
We’re looking for a talented and passionate Line Cook to join our culinary team in a fast-paced, elevated dining environment. This role is essential in ensuring our guests enjoy consistently high-quality dishes and a standout experience.
Responsibilities:

Qualifications:
